1 watermelon
1 cantaloupe or honeydew
1. Mark and trace the center of the melon lengthwise or crosswise. Cut “V” shaped cuts along the line with a “V” shaped cutter or with a knife. After you’ve cut the “V” shapes all around the melon, then pull the melon apart. Remove seeds.
2. Make melon balls from the inside of the fruit, leaving the outside intact. You can place the melon balls in the melon baskets or make “fruit kabobs” for your get-together
You can cut a handle for your basket too! Be creative!

1 c. water
1/2 c. carob powder
2/3 c. dates
1/2 c. natural peanut butter
1 tsp. vanilla
Place the dates in warm water so that they become soft. Place all ingredients in the blender and blend until smooth.
Serve with sliced apples or fruit of your choice.
Put fruit dip into a small bowl and place inside a melon basket if you like.

CRUST:
1 1/2 Tbsp. active dry yeast
1/3 c. and 1/2 c. hot water
1 c. whole wheat flour
1 c. unbleached all-purpose flour
1/2 c. cashews, raw and washed
1 tsp. salt
2 Tbsp. hot water
2 Tbsp. apple juice concentrate
RASPBERRY LIME CREAM CHEESE SPREAD:
16 oz. container vegan cream cheese
1/4 c. raspberry juice concentrate
1 tsp. lime zest
juice of half a lime
TOPPING:
2 c. strawberries, fresh, washed, sliced
1 c. fresh blueberries, washed
2 kiwis, peeled and sliced
1/2 c. pineapple tidbits
1. For crust, dissolve the yeast in the 1/3 cup hot water. In blender, combine yeast mixture, 1/2 cup water, and cashews until creamy. Add the 2 tablespoons apple juice concentrate and the 2 tablespoons water and blend until smooth.
2. Mix all the dry ingredients well. Add the liquid to your dry mixture, mix and knead. Form into the shape you desire. (Round for a pizza) Place on baking sheet.
3. Prick dough all over with fork. Bake for 20 - 25 minutes at 350 degrees, or until golden brown. Let cool. Combine ingredients for the cream cheese spread, stirring with a whisk until smooth. Chill. Spread cream cheese mixture over your crust.
4. Decorate top with the fruit of your choice. Chill and serve!

1/4 c. unsweetened shredded coconut
1/2 c. dates (oat flour coated)
1/4 c. dried papaya
1/4 c. dried pineapple
1/2 c. pecans
3 Tbsp. cornstarch
1/2 c. water
1/4 c. pure maple syrup
1 batch of dough used for fruit pizza
1. Hydrate the dried fruits with enough hot water to cover, if desired, before you make the dough for your roll.
2. Dissolve the cornstarch with 1/2 cup water and pour in a saucepan.
3. Rinse the fruits and add the rest of the ingredients in the pan and cook over medium-high heat. Stir constantly until thickened. Let cool.
4. Once cooled, you are ready to spread this mixture on your dough. Roll dough out thinly into a large rectangle. Spread filling over dough, leaving a margin around the outside. Roll up, starting at the long edge.
5. Place roll onto a round baking sheet. Form roll into a circular shape by sealing ends together. Make cuts in dough almost to the inner edge of the roll, about 2 inches apart. Twist each cut piece so it lays on its side, exposing the filling. Bake at 350 degrees about 20 minutes.
You can use this same dough and filling to make fruit empanadas. Cut dough into circles, put filling on one half of circle and fold the other side over. Seal edges with a fork. Bake until golden.

1 c. carob chips
1 1/3 c. peanut butter, natural
1/2 c. honey
walnut or pecan halves for topping
1. Place the peanut butter and honey in a pan over medium heat. Mix constantly until you reach a creamy and smooth consistency. Add carob chips and continue to stir until carob chips are melted. Be careful not to scorch!
2. Once the mixture is done spoon onto parchment paper, place a walnut or pecan half on top and cool in refrigerator.
Serve chilled.
For a decorative touch, serve the kisses in mini muffin cup liners.

Edible Floral Arrangement

1 fresh pineapple, sliced
2 dozen whole fresh strawberries
6 kiwis, peeled
1/2 melon (honeydew or cantaloupe)
1 lb. green grapes
1 lb. red grapes
EXTRA THINGS YOU WILL NEED:
one clean flowerpot
one Styrofoam ball
kabob skewers
toothpicks
fresh kale
1. To make flowers, cut triangle-shaped pieces from the pineapple slices to make “petals”. Place pineapple slices on the ends of skewers. Place strawberries on ends kabob skewers and toothpicks until they are all gone.
2. Place enough grapes on kabob skewers to cover the whole stick.
3. Put the Styrofoam ball into the flower pot, (can cut in half first). Cover the ball with kale and pin the kale down with toothpicks as necessary. Place the fruit kabobs into the Styrofoam ball.
3. Cut the kiwis around the middle with a “V” shaped cutter or knife, then separate to form two “tulips”. Introduce a kabob stick half way through the bottom of the kiwi and place in Styrofoam ball. You can make centers for the pineapple “flowers” by using half a melon ball and a blueberry and securing with a piece of toothpick.
Form your bouquet or floral arrangement to your taste. Ideal to take to someone who’s been sick or may be trying to stick to a healthy diet.
