Walnut Muffins


  • 1 1/2 c. whole wheat flour
  • 1 c. chopped walnuts
  • 1 c. unbleached white flour
  • 1/2 c. lecithin granules
  • 1 Tbsp. Ener-G baking powder
  • 1 1/2 tsp. sea salt
  • 1 tsp. coriander
  • 3/4 c. turbinado sugar
  • 2 c. water
  • 1 Tbsp. vanilla
  • additional chopped walnuts for the tops


  1. Mix dry ingredients together. Stir in water and vanilla.
  2. Scoop into oiled muffin tins, top with walnuts, and bake at 350 degrees F for about 35 minutes.
