- 1 medium zucchini, diced
- 1 medium summer squash, diced
- 2 c. diced red potatoes
- 1/2 c. diced red bell pepper
- 1/2 c. diced sweet onion
- 1 Tbsp. Italian dressing OR 1 Tbsp. olive oil, 1 tsp. minced garlic, 1 tsp. Italian seasoning and 1 – 2 tsp. salt
- Mix vegetables and seasonings. Place a portion on a square of parchment paper and fold up edges.
- Bake at 375 degrees for about half an hour, or until veggies are tender.
