Vegan Mango Cake


  • 8 oz. all purpose flour
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 1 tsp. cardamom powder
  • 12 oz. mango puree
  • 2 oz. olive oil
  • 1 tsp. vanilla extract
  • 6 oz. granulated sugar


  1. Sift flour, salt, cardamom and baking powder together.
  2. In a separate bowl, combine mango puree, sugar, vanilla and oil. Add to the flour mixture a little at a time, stirring just until well mixed.
  3. Pour into oiled spring-form pan and bake at 350 degrees for 35 – 40 minutes.
