Vegan Ginger Cake


  • 4 1/2 oz. sunflower oil
  • 1/2 c. dark muscavado sugar
  • 1/2 c. maple syrup
  • 1 Tbsp. apple cider vinegar
  • 1 c. all purpose flour
  • 4 tsp. ground ginger
  • 1 tsp. baking soda
  • 1/2 c. soy milk


  1. In a medium mixing bowl, combine oil, sugar, maple syrup, and apple cider vinegar and stir.
  2. Add flour, ginger and baking soda and mix well. Stir in soy milk. Pour into oiled loaf pan.
  3. Bake at 350 degrees for 1 to 1 1/2 hours, or until a toothpick comes out clean.
