Vegan Corn Fritters


  • 1 Tbsp. olive oil
  • 1/4 c. frozen sweet corn
  • 2 Tbsp. self-rising whole grain flour
  • 1/4 tsp. paprika
  • 1/4 tsp. cumin
  • 1/4 tsp. turmeric
  • 1/4 tsp. mixed herbs
  • 2 tsp. soy milk
  • 1 tsp. apple cider vinegar
  • 2 1/2 tsp. chopped chives
  • a pinch of black pepper
  • sweet chili sauce


  1. Heat olive oil in medium skillet. Mix flour, paprika, cumin, turmeric, mixed herbs, chives and black pepper.  
  2. Mix in vinegar, soy milk and corn. Form into patties and fry on both sides in hot olive oil.
  3. If you like, you can then place them in a 350 degrees oven for a few minutes to finish cooking.
