Tropical Rice Bake

Ingredients:

  • 2 c. cooked brown rice
  • 1 ripe banana
  • 1 tsp. vanilla
  • 1/4 – 1/2 tsp. sea salt
  • 1/4 c. raisins
  • 1 can coconut milk
  • 1/2 tsp. banana flavoring, opt. 6
  • 1 tsp. ground coriander
  • 6 Tbsp. honey
  • 1/2 c. crushed pineapple

Instructions:

  1. Pour coconut milk into blender and add honey, banana, vanilla, banana flavoring, salt, and coriander. Blend until well mixed.
  2. Combine rice, pineapple and raisins. Stir in coconut-banana mixture.
  3. Bake at 350 degrees until hot and bubbly, about 40 minutes.
