Tomato, Spinach, and Basil Salad


  • 4 – 5 Roma tomatoes, quartered
  • 1 medium red onion, sliced
  • 1/2 lb. fresh spinach, diced
  • 1 c. fresh basil, diced
  • 1 English cucumber, sliced
  • 1/2 c. prepared Creamy Italian Dressing (see other recipe)


  1. In a medium bowl, combine and toss vegetables. Drizzle with dressing and toss lightly.
