Tomato Salad


  • 2 medium tomatoes, diced
  • 1 small purple onion, finely diced
  • juice of 1 lemon
  • 1/2 tsp. grated lemon rind
  • 1 bunch fresh cilantro, chopped
  • salt to taste


  1. Combine all ingredients in a medium sized bowl, toss and chill before serving.
