- 2 Tbsp. canola oil
- 1/2 tsp. sea salt
- 2 Tbsp. lemon juice
- 2 Tsp. vanilla
- 2 – 3 Tbsp. maple syrup
- 12-ounce pkg. silken tofu, firm
- 1 c. fresh blueberries
- 1 c. fresh strawberries, sliced
- 1 c. fresh blackberries
- Drain tofu and add to blender along with canola oil, sea salt, lemon juice, vanilla and maple syrup. Blend until smooth.
- Layer in parfait glasses with fruit, garnishing with granola.
