Tofu Maple Cream and Berries


  • 2 Tbsp. canola oil
  • 1/2 tsp. sea salt
  • 2 Tbsp. lemon juice
  • 2 Tsp. vanilla
  • 2 – 3 Tbsp. maple syrup
  • 12-ounce pkg. silken tofu, firm
  • 1 c. fresh blueberries
  • 1 c. fresh strawberries, sliced
  • 1 c. fresh blackberries
  • granola


  1. Drain tofu and add to blender along with canola oil, sea salt, lemon juice, vanilla and maple syrup. Blend until smooth.
  2. Layer in parfait glasses with fruit, garnishing with granola.
