Three Pepper Pasta Salad


  • 6 c. cooked potatoes, diced
  • 1 c. Vegenaise
  • 1 tsp. dill weed
  • 1/4 c. water, or as needed
  • 1 tsp. onion powder
  • 1 tsp. sea salt
  • 1/2 c. sweet red pepper, diced
  • 1/2 c. sweet yellow pepper, diced
  • 1/2 c. sweet orange pepper, diced
  • 1/2 c. sliced black olives


  1. In a medium bowl, stir together the Vegenaise, dill, onion powder, salt and 1 tablespoon water, adding more water if needed.
  2. Add potatoes, peppers and olives and mix well. Chill.
