- 6 c. cooked potatoes, diced
- 1 c. Vegenaise
- 1 tsp. dill weed
- 1/4 c. water, or as needed
- 1 tsp. onion powder
- 1 tsp. sea salt
- 1/2 c. sweet red pepper, diced
- 1/2 c. sweet yellow pepper, diced
- 1/2 c. sweet orange pepper, diced
- 1/2 c. sliced black olives
- In a medium bowl, stir together the Vegenaise, dill, onion powder, salt and 1 tablespoon water, adding more water if needed.
- Add potatoes, peppers and olives and mix well. Chill.
