- 2 c. edamame
- 1 15-oz. can kidney beans, drained
- 1 15-oz. can garbanzo beans, drained
- 1/2 c. thinly sliced red onion
- 1/2 c. chopped fresh cilantro
- 1 tsp. lime zest
- 1/4 c. lime juice
- 1/4 c. olive oil
- 1/2 tsp. salt
- In a medium mixing bowl, combine edamame, kidney beans, garbanzos, onion and cilantro. Toss lightly.
- In a small bowl, combine olive oil, lime juice, lime zest and salt. Mix well and drizzle over salad. Toss to combine well.
