Three Bean Salad

Ingredients:

  • 2 c. edamame
  • 1 15-oz. can kidney beans, drained
  • 1 15-oz. can garbanzo beans, drained
  • 1/2 c. thinly sliced red onion
  • 1/2 c. chopped fresh cilantro
  • 1 tsp. lime zest
  • 1/4 c. lime juice
  • 1/4 c. olive oil
  • 1/2 tsp. salt

Instructions:

  1. In a medium mixing bowl, combine edamame, kidney beans, garbanzos, onion and cilantro. Toss lightly.
  2. In a small bowl, combine olive oil, lime juice, lime zest and salt. Mix well and drizzle over salad. Toss to combine well.
