Texas Caviar


  • 1/2 red onion, diced
  • 1 green bell pepper, diced
  • 1/2 red bell pepper, diced
  • 1 bunch green onions, diced
  • 1 jalapeño, seeded and diced
  • 2 garlic cloves, diced
  • 2 tomatoes, diced
  • 1 (15 0z.) can black beans, drained
  • 1 (15 oz.) can black-eyed peas, drained
  • 1 c. chopped cilantro
  • 1 bag frozen shoe-peg corn, thawed
  • 1 c. favorite Italian dressing


Combine all ingredients and mix well. Serve is a dip or in a pita.
