Sweet Potato Pudding


  • 1 1/2 lb. sweet potatoes, peeled and grated
  • 1 medium cooking apple, peeled and grated
  • 1 liter  (4 1/2 c.) coconut milk
  • 1/2 c. raisins
  • 1 tsp. vanilla
  • 1/2 tsp. nutmeg
  • 1/4 c. sugar


  • 1 c. coconut milk
  • 1/4 c. sugar
  • 1/3 c. raisins


  1. Combine all ingredients in a large mixing bowl and mix well.
  2. Pour into baking dish and bake at 350 degrees for 15 minutes.
  3. Sprinkle the toppings over the pudding and return to the oven for another 45 minutes to 1 hour, or until a toothpick comes out clean.
