Spinach Curry

Ingredients:

  • 2 packages fresh spinach, rinsed and chopped (can also use frozen spinach)
  • 1 small onion, chopped
  • 1 – 2 green chilies, chopped
  • 1 – 2 red chilies, halved
  • 1 – 2 Tbsp. oil
  • 1/2 tsp. mustard seeds
  • 1/2 tsp. cumin seeds
  • 2 tsp. urad dal
  • 2 – 3 garlic cloves, chopped
  • 4 – 5 curry leaves

Instructions:

  1. Heat oil in skillet and add mustard seeds, cumin seeds, onion, green chilies, red chilies, garlic, curry leaves, and urad dal.
  2. Cover and simmer a few minutes, then add spinach and salt.
  3. Cook, stirring, 2 – 3 minutes longer, or until spinach is tender.
