Spicy Mexican Salad

Ingredients:

  • 4 c. cooked basmati rice
  • 1 1/2 c. mild salsa
  • 2 c. shredded kale
  • 1 c. diced tomatoes
  • 1 c. diced avocado
  • 1/4 c. sliced black olives
  • 1/4 c. sliced green olives
  • 1/2 c. cooked corn
  • 1 c. black beans, drained
  • 1/4 c. sliced jalapeño
  • 1 recipe Ranch Dressing

Easy Ranch Dressing:

  • 1/4 c. Tofutti Better than Sour Cream
  • 1/4 c. Vegenaise
  • 1/2 tsp. fresh lime juice
  • 1/4 tsp. seasoned salt
  • Dash of garlic salt
  • 2 Tbsp. cold water

Instructions:

  1. In a medium sized bowl, mix the rice and salsa together and place in a serving bowl.
  2. Place remaining ingredients on top of the rice mixture.
  3. Drizzle ranch dressing on top and garnish with lime slices. Chill and serve.
  4. For the Easy Ranch Dressing, combine all ingredients and whip until well mixed.
