- Beans, such as pinto, small red beans, cranberry beans
- Chopped onions
- Chopped red bell pepper
- Chopped green bell peppers
- Diced jalapeños
- Minced garlic
- Salt to taste
- Cover with water and cook until tender, adding more water as necessary.
- Serve over brown rice, adding chopped fresh tomatoes and lettuce if desired.
* Leftover beans can be used for a loaf or burgers.
