Spicy Cheese Potato Salad

Ingredients:

  • 6 c. cooked, diced potatoes
  • 1/2 c. sliced green olives
  • 1 c. sliced dill pickles
  • 1/2 c. sliced okra pickles

Cheese Sauce:

  • 1 c. water
  • 1/3 c. yeast flakes
  • 2 Tbsp. + 2 tsp. unbleached white flour
  • 2 Tbsp. oil
  • 2 oz. canned pimentos
  • 1 Tbsp. cornstarch
  • 1 Tbsp. lemon juice
  • 1 tsp. salt
  • 1/2 tsp. onion powder
  • 1/8 tsp. garlic powder
  • 1/4 c. diced green chilies
  • 1 1/2 tsp. diced jalapeños

Instructions:

  1. For cheese sauce, combine all ingredients in blender except chilies and jalapeños. Blend until smooth.
  2. Pour into a medium saucepan and add chilies and jalapeños and heat, stirring, until thickened. Remove from heat and allow to cool.
  3. In a medium bowl, combine potatoes, olives, pickles, and okra. Stir in cheese sauce and mix well.
