Spicy Black Bean Soup

Ingredients:

  • 3 c. water, heated
  • 1 c. onion, diced
  • 1 1/2 c. petite diced tomatoes, undrained
  • 4 c. cooked black beans, rinsed and drained
  • 1 clove garlic, minced
  • 1 tsp. onion powder
  • 1 tsp. sea salt
  • 1/2 tsp. seasoned salt
  • 1/4 tsp. ground cumin
  • 1/2 c. yellow pepper, diced
  • 4 slices jalapeno pepper

Instructions:

  1. Heat water in medium saucepan. Add onion, tomatoes, seasonings and black beans.
  2. Simmer until almost tender, then add yellow pepper. Add jalapeno and cook until tender.
