Sautéed Spicy Asparagus

Ingredients:

  • 2 lbs. fresh asparagus, rinsed and chopped into 1″ pieces
  • 1 – 2 red chilies, halved
  • 1 – 2 Tbsp. oil
  • 1/2 tsp. mustard seeds
  • 1/2 tsp. cumin seeds
  • 2 tsp. urad dal
  • 4 – 5 curry leaves

Instructions:

  1. Heat oil in skillet and add mustard, cumin, urad dal, and curry leaves.
  2. Sauté a few minutes.
  3. Add asparagus and salt.
  4. Stir fry for 2 – 3 minutes longer, or until crisp-tender.
