Rice and Fruit

Ingredients:

  • 2 c. brown rice, cooked and cold
  • 2 c. strawberries
  • 2 c. chopped fruit (peaches, mangoes, or fruit cocktail in fruit juice)
  • 2 bananas
  • ½ c. walnuts, chopped
  • 3 c. soy yogurt or soy cream

Soy Cream:

  • 1 c. soy milk
  • ¼ c. brown rice, cooked
  • 1 Tbsp. vanilla
  • ½ c. strawberries
  • ¼ c. oil

Instructions:

  1. Mix rice, strawberries, chopped fruit, bananas and nuts.
  2. Blend soy milk, 1/4 cup brown rice, vanilla, and 1/2 cup strawberries. Add oil slowly while blending. Blend until smooth.
  3. Pour soy yogurt or soy cream over rice and fruit. Put in serving sized dishes and garnish with berries and nuts.
