Raw Carrot Cake


  • 2 1/2 c. ground carrot
  • 1 c. walnuts, ground
  • 1/2 c. soaked dates
  • 1 tsp. finely crushed ginger
  • 1 tsp. cinnamon
  • 1/2 tsp. cardamon
  • 1/2 tsp. nutmeg


Blend soaked dates into a paste. Combine all ingredients and mix well. Press into pan and place in freezer for an hour. Ready to serve!
