Pumpkin Granola


Mix #1:

  • 14 c. rolled oats

Mix #2:

  • 1 16oz. can pumpkin
  • 1 c. coconut milk
  • 1 c. maple syrup
  • 1 c. brown sugar

Mix #3:

  • 1 c. finely chopped walnuts
  • 2 c. raisins
  • 2 c. coconut chips


  1. Combine the ingredients of mix #2 in a large bowl and mix well. Stir in mix #1.
  2. Spread onto baking sheets and bake at 250 degrees, stirring every 15 minutes, for 1 – 2 hours, or until dry.
  3. Stir in mix #3 and serve, or store in a covered container.
