Potato Scones


  • 4 Tbsp. self-rising flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 Tbsp. vegan margarine
  • 4 Tbsp. cooked, mashed potatoes (nothing added)


  1. Mix flour, baking powder and salt. Rub in margarine until mixture resembles crumbs.
  2. Salt potatoes to taste. Work in mashed potatoes until mixture holds together. 
  3. Divide dough and shape into cakes or logs and place on baking sheet. 
  4. Brush tops with soy milk or vegan margarine if you like. Bake at 350 degrees for about 15 minutes.
