- 4 Tbsp. self-rising flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 Tbsp. vegan margarine
- 4 Tbsp. cooked, mashed potatoes (nothing added)
- Mix flour, baking powder and salt. Rub in margarine until mixture resembles crumbs.
- Salt potatoes to taste. Work in mashed potatoes until mixture holds together.
- Divide dough and shape into cakes or logs and place on baking sheet.
- Brush tops with soy milk or vegan margarine if you like. Bake at 350 degrees for about 15 minutes.
