Potato Salad


  • 5 c. potatoes, peeled, cut into cubes and steamed
  • 1/2 onion, minced
  • 1/2 carrot, peeled, finely grated
  • 1 stalk celery, minced
  • 1/4 c. fresh parsley, minced
  • 1/2 c. lemon pickles, chopped, optional
  • 1/2 tsp. sea salt
  • 1/2 tsp. dill weed
  • 1/4 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 Tbsp. nutritional yeast flakes
  • 1+1/2 c. Tofu Mayonnaise


  1. Combine all ingredients, mix well, and chill before serving.
