- 2 c. quinoa
- 3 c. vegetable broth or water
- 1/3 c. cranberries (or a handful)
- 1/3 c. pine nuts (or a handful)
- 2 green onions, diced
- ¼ c. chopped fresh cilantro
- Pinch of salt
- Bring water or broth to a boil in a small saucepan. Rinse and drain and add to saucepan.
- Reduce heat, cover and simmer until liquid is absorbed.
- In a medium mixing bowl, combine cooked quinoa, cranberries, pine nuts, green onions and cilantro and mix. Salt to taste.
