Plenty Protein Quinoa Salad


  • 2 c. quinoa
  • 3 c. vegetable broth or water
  • 1/3 c. cranberries (or a handful)
  • 1/3 c. pine nuts (or a handful)
  • 2 green onions, diced
  • ¼ c. chopped fresh cilantro
  • Pinch of salt


  1.  Bring water or broth to a boil in a small saucepan. Rinse and drain and add to saucepan.
  2. Reduce heat, cover and simmer until liquid is absorbed.
  3. In a medium mixing bowl, combine cooked quinoa, cranberries, pine nuts, green onions and cilantro and mix. Salt to taste.
