Pecan Pancake Bake with Caramelized Apples


  • 2+1/2 c. chopped walnuts
  • 3 Tbsp. canola oil
  • 1 c. dark brown sugar
  • 1/2 c. water
  • 1 tsp. almond extract
  • 2 tsp. vanilla extract
  • 1+1/2 c. oat flour
  • 1 tsp. baking soda
  • 3/4 tsp. salt
  • 1 tsp. cinnamon
  • 2 c. quick oats


  • 1/2 c. vegan margarine
  • 2+1/2 c. powdered sugar
  • 1+1/2 to 2 tsp. almond extract


  1. Place walnuts in food processor and grind until fine. Add oil and process until smooth like a butter.
  2. In a small saucepan, bring water and brown sugar to a boil. Add boiling sugar mixture to walnut butter and mix. Add remaining ingredients except filling and mix well.
  3. Place cookie dough by scoopfuls on oiled baking sheet and flatten with a fork. Bake at 350 degrees F for 8 – 9 minutes. Allow to cool for about 2 minutes, then spread with filling and sandwich two cookies together.
  4. For filling, mix margarine and almond extract, stirring in powdered sugar a little at a time.
