Oil-less Quesadillas


  • Whole wheat tortillas
  • Non-dairy cheese
  • Minced green onion
  • Diced red bell pepper
  • Chopped tomatoes
  • Sliced olives
  • Chopped onions


  1. Heat tortilla in a dry skillet, sprinking with non-dairy cheese. Add vegetables of choice over half of the tortilla.
  2. When cheese begins to melt, fold tortilla and toast on both sides. Serve with salsa and soy sour cream.
