Oatmeal Date Cookies


  • 2 c. quick oats
  • 1 c. fine whole wheat flour
  • 1 tsp. baking powder
  • 1/2 tsp. sea salt
  • 1/2 c. canola oil
  • 3/4 c. pure maple syrup
  • 2 tsp. vanilla
  • 1/4 c. chopped dates
  • 1/2 c. pecan pieces
  • 1/2 c. coconut
  • 1/4 c. Craisins
  • 1/4 c. water


  1. In a medium bowl, mix all the dry ingredients together. Make a well in the center and add all the rest of the ingredients. Stir until well blended.
  2. Place about 1/4 cup of dough per cookie on an oil-sprayed baking sheet, and lightly press them into a rounded shape.
  3. Bake at 400 degrees F for 10 – 12 minutes, or until golden brown. Carefully remove from tray and place on cooling rack.
