Oatmeal Apple Pancakes


  • 1 c. quick oats or rolled oats
  • 1 c. whole wheat flour
  • 1/4 c. soy milk powder
  • 2 Tbsp. ground flaxseed
  • 3 Tbsp. toasted wheat germ
  • 2 Tbsp. dark brown sugar
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 Tbsp. cornstarch
  • 1/4 c. unsweetened applesauce
  • 2 c. almond or soy milk

Apple Topping:

  • 2 c. apple juice
  • 3 Tbsp. dark brown sugar
  • 4 Tbsp. cornstarch
  • 2 medium apples, peeled, cored and thinly sliced
  • 1/4 tsp. nutmeg
  • 1/2 tsp. cinnamon
  • 2 Tbsp. vegan margarine


  1. For topping, mix apple juice and cornstarch and cook over medium heat until thickened, adding the apples while it is heating. Cook until the apples are just tender. 
  2. Meanwhile, blend oats until ground into flour. Mix the oat flour, whole wheat flour, soy milk powder, cornstarch, salt, baking soda, brown sugar, ground flaxseed and toasted wheat germ.
  3. Mix the applesauce and soy milk and add to the dry ingredients. Spray griddle with oil and pour batter onto hot griddle.
  4. Cook pancakes on both sides until lightly browned. Serve hot with apple topping and a sprinkle of cinnamon.
