• 2 apples, sliced (use Golden Delicious, Fuji or Gala)
  • 1/4 c. soy milk
  • 8 dates, pitted
  • 1/2 c. whole almonds
  • 1 tsp. vanilla
  • 1 c. old fashioned rolled oats
  • 1 c. pineapple juice or orange juice, unsweetened


  1. In a small bowl combine rolled oats and pineapple juice and set aside.
  2. In food processor, process almonds, dates, vanilla, and soy milk briefly, then add apples and pulse until apples are chopped but still chunky.
  3. Spoon over oats and serve.
