- 2 apples, sliced (use Golden Delicious, Fuji or Gala)
- 1/4 c. soy milk
- 8 dates, pitted
- 1/2 c. whole almonds
- 1 tsp. vanilla
- 1 c. old fashioned rolled oats
- 1 c. pineapple juice or orange juice, unsweetened
- In a small bowl combine rolled oats and pineapple juice and set aside.
- In food processor, process almonds, dates, vanilla, and soy milk briefly, then add apples and pulse until apples are chopped but still chunky.
- Spoon over oats and serve.
