- 6 c. red skinned potatoes, diced
- 1/2 c. celery, finely chopped
- 1/2 c. onion, finely chopped
- 1/2 t0 3/4 c. pickle relish
- 1 – 2 Tbsp. chicken style seasoning
- 1 tsp. salt
- 1/2 t0 1 c. soy mayonnaise
- Cut potatoes into cubes. Steam potatoes until tender. Cool. Add onion and celery.
- Mix dressing ingredients together and stir into potatoes. Chill and serve.
