- 2 c. quick oats
- 1/4 c. pecan pieces
- 1/4 c. coconut
- 1/4 c. canola oil
- 1/2 c. pure maple syrup
- 1 Tbsp. vanilla
- 2 Tbsp. hot water
- Mix the oats, pecan pieces and coconut together.
- In a small bowl mix the maple syrup, vanilla, oil and water. Whip until smooth and pour over the dry ingredients.
- Press into small clumps. Spread on baking sheet and bake at 175 to 200 degrees F for a couple of hours, or until golden brown.
- Serve with soy milk and a selection of fresh and dried fruits.
