Maple Pecan Granola


  • 2 c. quick oats
  • 1/4 c. pecan pieces
  • 1/4 c. coconut
  • 1/4 c. canola oil
  • 1/2 c. pure maple syrup
  • 1 Tbsp. vanilla
  • 2 Tbsp. hot water


  1. Mix the oats, pecan pieces and coconut together.
  2. In a small bowl mix the maple syrup, vanilla, oil and water. Whip until smooth and pour over the dry ingredients.
  3. Press into small clumps. Spread on baking sheet and bake at 175 to 200 degrees F for a couple of hours, or until golden brown.
  4. Serve with soy milk and a selection of fresh and dried fruits.
