Mango / Strawberry Salad


  • 2 c. green leafy lettuce
  • 1 c. baby spinach
  • 1 c. purple cabbage, shredded
  • 1 c. fresh strawberries, sliced
  • 1 c. mango chunks, fresh or frozen
  • 1 c. red grapes, sliced in half
  • 1/2 c. fresh blueberries
  • 1/4 c. roasted walnuts of pecans, for garnish


  • 2 Tbsp. pure maple syrup
  • 1/4 c. low fat Vegenaise
  • 1 Tbsp. apple juice concentrate
  • 1 Tbsp. honey
  • 1/4 tsp. poppy seeds


 Arrange fruits and vegetable on individual serving plates. For dressing, mix all ingredients. Drizzle over salads and garnish with toasted nuts.
