Mama’s Guatá Beans and Dumplings

Ingredients:

  • 1 lb. navy beans, cooked
  • 1/2 c. sofrito
  • 3 cloves garlic
  • 1 Tbsp. olive oil
  • 1/2  – 1 tsp. salt
  • 1 can tomato paste
  • sazón or vegetable bouillon
  • ground cumin, opt.
  • oregano, opt.
  • ground annatto, opt.
  • water

Dumpling:

  • 1/2 c. unbleached all-purpose flour or white whole wheat flour
  • 1/2 tsp. salt
  • 2 Tbsp. hot water
  • 1 tsp. non-hydrogenated shortening

Instructions:

  1. Starting with the dumplings, combine flour, salt, shortening and hot water and mix until a soft dough is formed.
  2. You can add seasonings like garlic or cilantro if you like. With floured hands, roll dough into small balls, then roll out on a floured board with a rolling pin until thin.
  3. Bring soup ingredients to a boil and drop dumplings into boiling broth. Simmer until dumplings are done.
