Lucia’s Basic Soy Mayonnaise


  • 1 c. cold water
  • 1/2 c. soy supreme soy milk powder or other neutral flavor soy milk powder
  • 1 Tbsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/2 c. oil
  • 1/4 c. lemon juice


  1. Blend all ingredients except oil and lemon juice. Put the lemon juice into a 3 or 4 c. container and set aside.
  2. Drizzle in the oil slowly while blending on high speed. Continue to blend until thickened.
  3. Pour into container with the lemon juice and fold in the lemon juice until thoroughly mixed. Chill.
