- 2 lb. potatoes or medium-sized sweet potatoes
- spray oil
- Cut potatoes into wedges or strips. Parboil potatoes*, then drain them for about 10 minutes.
- Return to pan, cover and shake to soften a little. Spread on oiled baking tray and spray with oil.
- Bake at 475 degrees for about 25 minutes. Salt to taste.
*For sweet potato fries, if the potatoes are already moist, there is no need to parboil them.
