Low Fat Fries or Sweet Potato Fries


  • 2 lb. potatoes or medium-sized sweet potatoes
  • spray oil


  1. Cut potatoes into wedges or strips. Parboil potatoes*, then drain them for about 10 minutes.
  2. Return to pan, cover and shake to soften a little. Spread on oiled baking tray and spray with oil.
  3. Bake at 475 degrees for about 25 minutes. Salt to taste.

*For sweet potato fries, if the potatoes are already moist, there is no need to parboil them.
