Key Lime Pancakes


  • 1 c. original flavor almond milk
  • 2 Tbsp. fresh lime juice
  • 2/3 c. whole wheat pastry flour
  • 2/3 c. graham cracker crumbs
  • 2 Tbsp. sugar
  • 1 Tbsp. cornstarch
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. sea salt
  • 1 Tbsp. water
  • 1 tsp. vanilla
  • 1 Tbsp. lime zest


  • 1 c. powdered sugar
  • 2 Tbsp. fresh lime juice


  1. Mix the almond milk and lime juice together. Set aside. In a medium-sized bowl, mix the dry ingredients together.
  2. Add the almond milk mixture, water, vanilla, and lime zest and mix well.
  3. Spray a skillet with non-stick cooking spray and heat to medium. Spoon ¼ cup batter into the pan. Cook until it starts to bubble, flip, and cook until the top springs back when touched.
  4. Mix the powdered sugar and lime juice together until smooth. Drizzle desired amount over pancakes.
