Jamaican Peanut Porridge


  • 1 c. raw peanuts
  • 1 c. oatmeal
  • 1 Tbsp. whole wheat flour
  • 1 Tbsp. cornmeal
  • 1/2 c. brown sugar
  • 3 c. Very Vanilla soy milk
  • pinch of nutmeg
  • 1/2 tsp. salt
  • 1/2 tsp. vanilla


  1. Combine all ingredients in a medium saucepan. Cook, stirring constantly, until thickened.
  2. Serve hot or cold. Garnish with dried fruits, nuts and seeds.
