Jalapeño Corn Muffins

Ingredients:

  • 1 c. all-purpose flour
  • 3/4 c. corn meal
  • 1/4 c. sugar
  • 1 1/2 tsp. sea salt
  • 1 tsp. red pepper flakes
  • 1/4 tsp. cayenne pepper
  • 1 Tbsp. baking powder
  • 1 c. original unsweetened almond milk
  • 1 Tbsp. cornstarch
  • 1/4 c. canola oil
  • 3 Tbsp. fresh jalapeño, diced
  • 1/2 c. frozen or canned corn

Instructions:

  1. Mix all ingredients together in a medium-sized bowl.
  2. Spray a muffin tin with non-stick cooking spray. Fill muffin cups approximately 3/4 full.
  3. Bake at 350 degrees for 15 minutes.
