Idalia’s Favorite Meatballs

Favorite Meatballs

1 packet of soft Mori-Nu tofu (i use whatever i happen to have)
2 cups pecan meal
1 large onion, chopped and cooked til golden
2 tablespoons of imitation beef seasoning
6 cloves of crushed garlic
1 cup gluten flour
2 cups brown rice, cooked

1. cook the onion and the garlic until the onion is cooked in a little bit of water or oil (i prefer to drizzle olive oil over them once they are baked)

2. Mix all the ingredients and form the balls. If you don’t have imitation to beef seasoning, then use what your favorite herbs and spices are.

Bake at 350 F for 30 minutes. (some ovens are hotter than others and it may be that it may require 20 minutes to cook bake).

It’s a custom in the carribbean to serve pasta with cooked ripped plantains.
