- 4 small cucumbers or 1 english cucumber, finely diced
- 3 large tomatoes, finely diced
- 1 red bell pepper, finely diced
- 2 green onions, minced
- olive oil
- fresh lemon juice
- salt to taste
- pepper to taste
- Za’atar* to taste, or any fresh herb
Combine vegetables, add dressing ingredients to taste. Mix well and serve.
* za’atar is a mixture of thyme, sumac and ground toasted sesame seeds.
