- 1 c. chickpeas, rinsed and drained
- 1 stalk celery
- 2 Tbsp. matchstick carrots
- 1 tsp. onion powder
- 1/2 tsp. sea salt
- 1 tsp. freshly squeezed lemon juice
- 2 Tbsp. fresh cilantro, chopped
- 3 Tbsp. soy mayonnaise
- 1/4 c. chopped red peppers
- In a food processor, combine chickpeas, carrots, red peppers and celery. Process until coarsley chopped.
- Place in a medium bowl and mix in onion powder, salt, lemon juice, cilantro and soy mayonnaise. Mix well. Serve with pita chips.
