Holiday Slaw


  • 3 c. raw sweet potato, shredded                    
  • 1 medium sweet apple, peeled & chopped                
  • 1/4 c. yellow raisins or dates, chopped
  • 1 c. fresh pineapple tidbits
  • 1/2 c. pecans or walnuts chopped                               


  • 1/2 c. Vegenaise or coconut cream                                                 
  • 1 – 2 Tbsp. raw unfiltered honey                          
  • 2 Tbsp. fresh lemon juice                                     
  • 1 tsp. lemon zest


  1. In a large bowl, combine all the ingredients and mix well.
  2. Combine dressing ingredients, mix well and stir into salad. Serves 2-3
