Holiday Salad


  • 1 pound red and green lettuce, trimmed and cut into 1-inch circles
  • 1 medium green apple, peeled, cored, and cut into 1-inch cubes
  • 1 avocado, diced into 1-inch cubes
  • 1 Tbsp. dried cranberries
  • 2/3 c. defrosted corn kernels, or fresh corn


  1. Prepare salad in a bowl, cover and refrigerate. Drizzle on dressing and sprinkle with poppy seeds just before serving.
