Healthy Curry in a Hurry


  • 1 lb. extra-firm tofu
  • 2 Tbsp. homemade curry powder
  • 2 garlic cloves, minced
  • 1 medium onion, finely chopped
  • 1 c. tomato puree, or 4 Roma tomatoes
  • 1 tsp. sea salt


  1. Drain and slice tofu, and place in a baking dish. Sprinkle with some of the curry powder.
  2. In blender, blend tomato, garlic, onion, salt and remaining curry powder.
  3. Bake at 350 degrees until firm.
