Hawaiian Waffles


  • 2 c. whole white wheat flour
  • 1 Tbsp. baking powder, aluminum-free
  • 1/4 c. shredded coconut
  • 1/2 tsp. sea salt
  • 1/2 c. craisins
  • 1 c. crushed pineapple
  • 2 Tbsp. canola oil
  • 2 c. soy milk
  • 1/4 c. honey
  • 1 Tbsp. vanilla
  • 2 Tbsp. pure maple syrup

Pineapple Sauce:

  • 1 3/4 c. crushed pineapple with juice
  • 1/4 c. pure maple syrup


  1. In a medium mixing bowl combine the dry ingredients. Make a well in the center and pour in the liquid ingredients and mix.
  2. Pour some of the batter into hot, oil-sprayed waffle iron and bake for 3 – 5 minutes.
  3. For sauce, blend pineapple and maple syrup in blender until smooth. Spoon over waffles and garnish with coconut and fruit.
