Guilt-Free Guacamole


  • 2 medium avocados, peeled and chopped
  • 1 15 oz. can white beans, rinsed and drained
  • 3 Tbsp. fresh lime or lemon juice
  • 1 clove garlic, minced
  • 1/2 tsp. salt
  • 1/4 tsp. ground cumin
  • 1/2 c. red or green onion, minced
  • 1/4 c. finely diced tomatoes
  • 2 Tbsp. chopped cilantro, opt.
  • 1/2 small jalapeño, finely chopped, opt.


  1. In a food processor, combine avocado, beans, lime or lemon juice, garlic, salt and cumin.
  2. Process until smooth. Stir in onions, tomatoes, cilantro and jalapeño.
