- 2 medium zucchini, cut on a slant
- 2 1/2 Tbsp. olive oil
- 1/2 c. onions, sliced
- 1/4 tsp. sea salt
- Place zucchini in a medium bowl, drizzle with some of the olive oil and sprinkle with salt.
- Brush grill pan with olive oil and heat.
- Place zucchini on pan and grill until lightly browned on each side and crisp-tender.
- Break onions into rings and sauté in a little olive oil until tender. Garnish zucchini with onions.
