Grilled Zucchini with Sauteed Onions


  • 2 medium zucchini, cut on a slant
  • 2 1/2 Tbsp. olive oil
  • 1/2 c. onions, sliced
  • 1/4 tsp. sea salt


  1. Place zucchini in a medium bowl, drizzle with some of the olive oil and sprinkle with salt.
  2. Brush grill pan with olive oil and heat.
  3. Place zucchini on pan and grill until lightly browned on each side and crisp-tender.
  4. Break onions into rings and sauté in a little olive oil until tender. Garnish zucchini with onions.
