- 2 medium zucchini, cut on a slant
- 2 1/2 Tbsp. olive oil
- 1/2 c. sliced onions
- 1/4 tsp. sea salt
- Place sliced zucchini in a bowl. Drizzle olive oil over the zucchini and mix well.
- Place in a single layer on grill pan and grill until over medium heat until browned and tender. Brush griddle with more olive oil as needed.
- Sauté onions in a separate pan until tender and browned on both sides.
- Combine onions and zucchini on a serving platter, sprinkle with salt and serve hot.
