Grilled Zucchini with Sautéed Onions


  • 2 medium zucchini, cut on a slant
  • 2 1/2 Tbsp. olive oil
  • 1/2 c. sliced onions
  • 1/4 tsp. sea salt


  1. Place sliced zucchini in a bowl. Drizzle olive oil over the zucchini and mix well.
  2. Place in a single layer on grill pan and grill until over medium heat until browned and tender. Brush griddle with more olive oil as needed.
  3. Sauté onions in a separate pan until tender and browned on both sides.
  4. Combine onions and zucchini on a serving platter, sprinkle with salt and serve hot.
